Gesso is absorbent even if it is plate smooth. The paint does not get absorbed as much and sits on the surface more making it easy to blend and manipulate. Granted it is not highly absorbent but the fact remains that some oil will get into the primer and flatten the image. You can get around this by using an under-painting oil ground on top of the surface of a universal ground canvas but this is very time consuming and expensive. Colors that have dried on the palette can be awakened with a wet brush and reused an infinite number of times. Schmincke limits use of ONETZ (ox gall) as a dispersant. This helps the artist maintain full control of color, even on softer papers. You can mix super granulating colors to create unusual color shifts. The granulating color shift will vary with the mixing ratio used. What is the right paper for granulation?
